It was harvested at dawn on August 14th at 14 °C ambient temperature. The must obtained was racking statically and fermented for 22 days in stainless steel at an average temperature of 16 degrees.
Smoked fish (salmon and trout), oysters and clams, shellfish, crabs and seafood in red sauce (mussels), white fish in green sauce and menier (sole, hake, turbot), grilled fish and baked (sea bass, sea bream and sea bream), salads, pasta and rice, poultry, Japanese and Lebanese food, Galician and fresh cheeses.
